no bake oreo cookie fudge

The no bake Oreo cookie fudge is probably one of the nicest, sweet treats I've had in a while. The small, bite sized portions it can be cut into and the sweet flavour make it perfect as a pick me up at the end of  a long, hard day. The best thing about it is that it only requires three ingredients to make and will probably last you 1-2 weeks. Plus it is no bake meaning you don't have to worry about leaving it in the oven too long and burning it (which has happened to me before. More times than I'd like to admit!)

NO BAKE OREO COOKIE FUDGE

PREP TIME: 5 mins | Cook Time: 5 mins | Makes: 32 squares

INGREDIENTS

  • 510 g white chocolate melts
  • 397 g condensed milk
  • 2 1/2 cup crushed Oreos

METHOD

  1. Line an 8" square (for thicker fudge) or 13"x9" pan (for thinner fudge) with parchment paper.
  2. Place Oreo cookies in a ziploc bag and crush with a rolling pin, or chop them on a cutting board.
  3. Prepare a double boiler, by placing a pot with water on a stove and bring it to a simmer; then place a big bowl (I use a metal stand mixer bowl) over the pot. (You can use a microwave safe bowl and melt the ingredients in the microwave).
  4. Place the chocolate and milk in the bowl and melt, stirring often.
  5. Remove the bowl from the pot.
  6. Add crushed Oreo cookies and stir gently.
  7. Pour the fudge into the prepared pan. Spread evenly. Tap the pan against the counter to release any air bubbles.
  8. Let the fudge set. You can cool it to a room temperature and then place it in the fridge. It should be set in about 45 minutes.
  9. Cut into squares and place in an air tight container to store.
NOTE: Try and work very fast as the chocolate solidifies pretty quickly. If you have trouble getting the fudge out of the pan at the end (like I did) pop into the microwave and heat it up until it softens.
